Deep in the western reaches of Guatemala is one of the most prominent coffee-producing regions of Central America. This is Huehuetenango – and it is characterized by its climbing altitudes, rocky mountainsides, lush forests, rich soils, and ideal climates for coffee production. At just 1,750 meters above sea level is the origin of this lot, Finca Isnul, towering high with its 160 hectares. 

The farm is run by the Anzueto family and has been with the family since the 1940s. Currently, Leticia and Lorena Anzueto run the farm after inheriting it when their father passed away in 2015. The farm is one of 6 involved with Family Bonds, our exporting partners in Guatemala who work directly with farms in Huehuetenango to improve processing and cultivating methods in order to connect the producers with international markets.
 

Finca Isnul has won or placed in the top at Guatemala's Cup of Excellence every year. Not only is Finca Isnul a spectacle amongst the coffee-producing lots in Huehuetenango due to its size and production of Pacamara – but also thanks to its unique processing methods. Their hybrid technique begins after the coffee is carefully handpicked and sorted to ensure only the highest quality cherries progress to the next stage.
 
The cherries are then de-pulped by squeezing the coffee through screens to remove the exterior fruit. The seeds are still coated in the exterior mucilage and are thus sent to undergo a 36-hour fermentation. The coffee is evenly dispersed in a dry environment to allow for the breakdown of the exterior mucilage, enhancing the overall flavour of the coffee. Once fermentation is complete, the coffee is then washed a final time and set to dry either on raised beds in the open sun or in mechanical dryers.
 
 
This unique process not only creates a unique spectrum of flavours, but also retains the crispness and vibrancy that is the hallmark of Finca Isnul. Profiled for espresso - expect beautifully clean acidity, smooth finish with lingering sweetness.
